Acetone and water are completely miscible so distillation would be a good way to separate them. Use a flask with a condenser attached cooled by water. Then heat the mixture to say 65C (acetone boils at 56C. The acetone will evaporate and re-condense on the cold glass surface. It should then be collected in a separate flask. This sort of setup is fine
The acetone will not completely disappear from the water and some water vapour will co condense with the acetone, but it will be OK for removing your nail polish.
